I made this on a Saturday afternoon when the temperature hit 35C (95F) and I had a bag of ripe peaches going soft on the counter. Peaches, limes, sugar, water, bourbon, and ice, all thrown into a blender. Two minutes later I had a frozen drink that tasted like summer distilled into a glass. You could swap the bourbon for rum if that is more your speed.

The peaches do most of the heavy lifting here. Ripe ones blend into a smooth base that the lime and bourbon cut through. The sugar is there to balance the citrus, not to make it sweet. Use less if your peaches are already very ripe and fragrant.


Tips for the Best Slushie Texture

Use frozen peaches or extra ice

If your peaches are fresh and room temperature, add more ice to compensate. The drink should be thick enough to hold a straw upright. Thin slushies melt fast and taste watered down.

or, freeze the peach slices on a sheet pan for an hour before blending. This gives you a thicker texture without diluting the flavor with excess ice.

Blend in stages for a smooth result

Add the liquid ingredients first: lime juice, water, sugar, and bourbon or rum. Blend briefly. Then add the peaches and ice in batches.

This prevents large chunks of ice from getting stuck under the blades. The motor works more efficiently when liquids are at the bottom.

Description

Instructions

  1. Juice the limes and add the juice to a blender.
  2. Add water, sugar, and sliced peaches to the blender.
  3. Blend until smooth.
  4. Add bourbon or rum and blend again.
  5. Add ice cubes and blend until the mixture reaches a slushie consistency.
  6. Serve immediately.

  • Taste your peaches before adding the full amount of sugar. Very ripe, fragrant ones need less; the sugar here is balancing the lime, not sweetening the drink.
